directions

  • chop onion, scallions, and canned fruit.
  • saute onion in olive oil in a sauce pan until translucent.
  • add coconut and saute until slightly golden.
  • pour in chicken stock and bring to a boil.
  • add rice and cook for 1-2 minutes.
  • add fruit and fold into the rice.
  • turn off heat, cover, and allow to set for 5 minutes.
  • top with chopped scallions.
