- 3 tablespoons olive oil
- 1 medium onion
- 1⁄3 cup flaked coconut or 1/3 cup shredded coconut
- 2 cups chicken stock
- 2 cups Minute Rice
- 6 scallions, chopped
- 0.75 (15 ounce) can mixed tropical fruit salad
directions
- chop onion, scallions, and canned fruit.
- saute onion in olive oil in a sauce pan until translucent.
- add coconut and saute until slightly golden.
- pour in chicken stock and bring to a boil.
- add rice and cook for 1-2 minutes.
- add fruit and fold into the rice.
- turn off heat, cover, and allow to set for 5 minutes.
- top with chopped scallions.
