  1. Heat oil in a large saucepan and add coconut.
  2. Cook, stirring constantly until very lightly browned Add minced onion.
  3. Continue cooking and stirring 1 minute longer.
  4. Add rice, stir to coat.
  5. Add broth and bring to a boil.
  6. Cover and reduce heat to low.
  7. Simmer 25 to 30 minutes until rice is tender.
  8. Remove from heat and stir in mango.
  9. Sprinkle with chives.
