This is a great recipe for many reasons! I make a similar recipe, but it is ore tomato based and has a lot more spices, and I make it in the oven. When I was making it, I was itching to put in some chili powder and cumin, but I decided to leave out the spices and make it the way it was posted. I am glad I did! First of all, it is really tasty just as it is! My son gave it thumbs up! And the other reason is that it is such a great base recipe! I can see taking it in all kinds of directions. I was thinking that sweet potato and chicken would be great to add, also some greens like spinach or chard, and even pineapple would be great! This would even be really good with curry added, or Moroccan spices. Thanks for posting it! Made for ZWT9
