Caribbean Spiced Tuna With Fresh Mango Salad

"I haven't tried this recipe that I ran across at Recipe Island. But, it sounds really good, especially the rub. How can you go wrong with a big, fat tuna steak and mango??? Posted for ZWT9. PREP TIME DOESN"T INCLUDE 4 HOURS MARINATING TIME."

  • FOR THE SALAD:

  • Combine all ingredients and allow to marinate in the refrigerator for 4 hours.
  • Meanwhile, prepare the rub:

  • FOR THE RUB:

  • Place the cinnamon sticks, cloves, fennel seeds and peppercorns in a spice grinder or coffee grinder. Process until finely ground.
  • Add the freshly grated nutmeg and combine well.
  • FOR THE FISH:

  • Coat the fish with the spice rub and pan sear to rare or medium rare.
  • Serve immediately, with the mango salad on top and alongside.
