  • Cut up onions and fennel into large pieces removing to core of the fennel.
  • In a large skillet add olive oil, butter, fennel and onions.
  • Cook on med high to high for about 10 minutes stirrig occasionally.
  • Sprinkle with salt and stir.
  • Reduce heat to medium and cook for another 20 to 40 minutes stirring occasionally.
  • Check for desired doneness. I like it when it is mostly browned on all sides. Be careful they don't become too dry.
  • Remove from heat and add parmesan.
