Carmelized Red Onion Dip

- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 large red onion, chopped
- 1 (8 ounce) package cream cheese, softened
- 1⁄4 cup mayonnaise
- 1 tablespoon chopped fresh thyme
- 1 tablespoon chopped fresh chives
- 1 tablespoon chopped shallot
- 1 tablespoon hot sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1 teaspoon fresh ground black pepper
- 1 (16 ounce) container fresh ricotta cheese
- 6 slices pancetta, cooked and crumbled
directions
- In a medium saucepan over medium heat, heat olive oil. Add butter, and heat until melted. Add onion, and cook, stirring occasionally, for about 15 minutes, or until tender and lightly browned. Remove from heat, and let cool completely.
- In the work bowl of a food processor, pulse cream cheese until smooth. Add mayonnaise, thyme, chives, shallot, hot sauce, ad Worcestershire Sauce; pulse until combined. Add caramelized onion, salt, and pepper; pulse until combined.
- Transfer mixture to a serving bowl, and stir in cheese and pancetta. Garnish with fresh chopped chives and thyme. Store, refrigerated, in an airtight container for up to 3 days.
