- 2 lbs small cut stew meat
- 1⁄4 cup flour
- 1 yellow onion
- 2 garlic cloves
- 3 tablespoons canola oil
- 1 green bell pepper
- 3 stalks celery
- 1 (14 1/2 ounce) can diced tomatoes
- 1 (7 ounce) can diced green chilies
- 1 bunch cilantro
- 3 cups low sodium beef broth
- 3 tablespoons cumin powder
- 3 tablespoons garlic powder
- 1 tablespoon cayenne pepper
- 2 teaspoons salt
- 1 teaspoon pepper
directions
- Dredge room temperature meat in flour.
- Puree bell pepper and celery.
- Dice onion and mince garlic.
- In a hot dutch oven, add oil. Saute onion and garlic and remove.
- Add stew meat and sear on both sides and remove.
- Deglaze with beef broth. Add onions, garlic, meat, pureed vegetables, tomatoes, green chilies and seasonings. Bring to a boil and reduce to a simmer. Simmer covered for 3-5 hours, uncovering pot for the last 45 minutes. Add cilantro and serve warm.

While food has always been an important aspect of my family, my interest in cooking developed as I volunteered for Share Our Strength's Operation Frontline nutrition-through-cooking program for low-income families.
