directions

  • Fry onion over medium heat for about 5 minutes.
  • Add potatoes and continue cooking for about 10 or 15 minutes, until onions are soft.
  • Add garlic and cook for only seconds.
  • Then add the rest of the ingredients and stir and let heat through.
  • Reduce heat to medium low and then cover and let cook until potatoes are soft and ingredients are melded.
  • Stir frequently.

  1. I am really fond of this dish. It keeps well for leftovers - gets better even! Be careful on the amount of spices- I used too much cinnamon... Carol- for dummies like me you should put some approx amounts..

As an ethical vegan, I'm always on the lookout for tasty, cruelty-free meals. I work in the medical field, but my heart lies with anything and everything relating to animal welfare.
