Carrot and Flaxseed Muffins - GF

"From a blog "Hazelnut". I used Precision Gold gluten-free flour. I think you would get different results with different flours.I was trying to replicate Flax4Life's carrot muffins. Not bad, but this isn't it."

  1. I enjoy the flavour and texture of Flax for Life carrot raisin muffins. I made some substitutions as follows: 1 1/2 c. oat flour for the precision gold gluten free 2/3 c. coconut sugar for the brown sugar I used 3/4 c. buttermilk at room temperature and used room temperature eggs 1 1/2 c. Apple for the nuts I added 1/4 tsp. nutmeg This made a soft tasty 20 muffin count. I appreciate the recipe to follow and adjust.
