  1. Cook the carrots and leek in a saucepan of boiling salted water for 5-6 minutes. Drain well and transfer to a shallow baking dish.
  2. Mix together the orange juice, honey, garlic, mixed spice and thyme and pour the mixture over the vegetables. Add salt and pepper to taste.
  3. Cover the baking dish and bake at 350F for 30 minutes or until vegetables are tender.
  4. Remove the lid and sprinkle with poppy seeds. Sprinkle with orange zest.
