  • Toss raisins, carrots, and pineapple together lightly; set aside.
  • Stir together mayonnaise, lemon juice, salt and sugar and add to the raisin mixture.
  • Refrigerate until served.

  4. I can't claim to have ever been a big fan of this type of salad. I made it because I had raisins and carrots on hand and thought my kids might enjoy this. Lo and behold for me, I also happened to have an 8 oz can of pineapple tidbits in the pantry. So I made this. Initially, they did not like the looks of the salad and they "weren't going to eat that"! Ha, ha. The joke was on them as they ate ALL their serving and loved it. The pineapple was the trick, I think. That's what worked for me, at any rate! I'll definitely make this again.
     
  5. This was really yummy!! I also added some of the juice from the pineapple! It was wonderful! My crew ate it right up. Thanks for the recipe Trisha - its definately a keeper!

Tweaks

  1. Also I would also use finer grated carrots, not the "usual cheese" size grate. This is a 1/2 cup serving, as I recommended in the earlier post.

  2. Followed recipe as listed, except used Miracle Whip Light (mayonnaise-type dressing). It was very tasty! Says it serves 4, only if you aren't eating anything else!!! I'd say serves at least 10 to 12 (1/2 cup servings). Some have said it was too sweet for their taste, if that's the case for you, use less or no sugar. I think "crasins" would work fine, though I haven't tried it yet.
     
  3. I doubled everything but only had one can of pineapple. It was fine that way. Next time I will try fewer raisins, too.
     
  4. Leave the sugar out, and substitute pineapple juice for the lemon juice.
     
  5. I'm making this recipe for Thanksgiving..so I'm hoping all goes well because its for over 30 people..

I still get it out frequently and several of its recipes have become regulars in my house.</p>
