- 2⁄3 cup raisins
- 2 1⁄2 cups coarsely grated carrots
- 1 (20 ounce) can crushed pineapple, drained
- 1⁄3 cup mayonnaise-type salad dressing
- 1 tablespoon lemon juice
- 1⁄4 teaspoon salt
- 1 tablespoon sugar
directions
- Toss raisins, carrots, and pineapple together lightly; set aside.
- Stir together mayonnaise, lemon juice, salt and sugar and add to the raisin mixture.
- Refrigerate until served.

I can't claim to have ever been a big fan of this type of salad. I made it because I had raisins and carrots on hand and thought my kids might enjoy this. Lo and behold for me, I also happened to have an 8 oz can of pineapple tidbits in the pantry. So I made this. Initially, they did not like the looks of the salad and they "weren't going to eat that"! Ha, ha. The joke was on them as they ate ALL their serving and loved it. The pineapple was the trick, I think. That's what worked for me, at any rate! I'll definitely make this again.

Followed recipe as listed, except used Miracle Whip Light (mayonnaise-type dressing). It was very tasty! Says it serves 4, only if you aren't eating anything else!!! I'd say serves at least 10 to 12 (1/2 cup servings). Some have said it was too sweet for their taste, if that's the case for you, use less or no sugar. I think "crasins" would work fine, though I haven't tried it yet.

The cookbook I have used most during my 37 years of marriage is the Better Homes and Garden New Cook Book (red and white checkered.) I still get it out frequently and several of its recipes have become regulars in my house.</p>
