- 3 medium carrots, sliced
- 3⁄4 cup boiling water
- 1 cup apple juice or 1 cup apple cider, chilled
directions
- In covered small saucepan, cook carrot in the boiling water about 15 minutes or until very tender; do not drain. Cool slightly.
- Transfer carrot mixture to blender. Add apple juice. Cover and blend until smooth. Chill before serving.
