ingredients
- 1⁄2 cup whole wheat flour
- 1⁄2 cup plain flour
- 1⁄2 cup sugar
- 1⁄2 cup brown sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 pinch salt
- 1⁄2 cup oil
- 2 eggs
- 1 teaspoon vanilla essence
- 2 cups carrots
- 1⁄2 cup raisins (optional)
directions
- Lightly grease the bottom of a loaf dish.
- Combine the first 8 ingredients together in a bowl and mix well.
- Add remaining ingredients except carrots and raisins.
- Beat at low speed until just blended.
- Stir in carrots and raisins and pour into a dish.
- Place the dish on an inverted saucer in the oven.
- Microwave at medium-high (70%) until a wooden toothpick inserted in the centre comes out clean.
- Cool for 5 minutes.
- Remove from dish and turn the side over.
- Cool completely.
- Serve immediately once cooled down or store in the refrigerator and serve when everyone's hungry.

I thought this carrot bread was just okay. I cut the sugar to a total of 3/4 cup and did not include the optional raisins. I thought the flavor could have been better. The texture was very good though and this recipe was easy to follow and relatively quick - the only time consuming part is shredding the carrots.

We really enjoyed this loaf, though we made a few modifications. We used only 1/4 cup of brown and a 1/4 cup of white sugar, as per some of the recommendations, and we reduced the oil to 1/3 of a cup. Next time we will increase the cinnamon to 1 1/2 teaspoons and add 1/2 teaspoon of nutmeg. We baked it for 45 minutes at 350 F. Thanks for posting such a versatile recipe!

This was a really easy recipe to follow. I made carrot juice and kept the pulp from my juice machine and used that for the grated carrots. I also used less than 1/4 cup brown sugar instead of the cup. I left out the raisins and baked it in the oven, 350 degrees for 60 minutes. Maybe a bit longer. This bread was more of a pudding/cake. The taste was light and perfect sweetness. A nice spongy texture, moist and great alone or served warm with ice cream or a nice cold glass of milk! It was addicting and i had to hide it....FROM MYSELF!! This will DEFINATELY be my all time Carrot bread recipe!!
