  • Combine oil & sugar; mix well. Sift dry ingredients; mix alternately with the eggs (1 at a time) to the oil & sugar mixture. Add carrots, pineapple, & vanilla; mix well. Add nuts. Bake at 350 degrees for 1 hour in 10-inch tube or bundt pan. You may also divide batter between 3 9-inch round pans.
