Carrot Cake

- 2 cups sifted flour
- 2 teaspoons baking powder
- 1 1⁄2 teaspoons baking soda
- 1 teaspoon salt
- 2 1⁄2 teaspoons cinnamon
- 2 cups sugar
- 1 1⁄2 cups vegetable oil
- 4 large eggs
- 2 3⁄4 cups carrots, coarsely grated
- 1 (8 ounce) can unsweetened crushed pineapple, drained
- 1 cup walnuts, chopped
- 1 cup coconut, shredded
- 1⁄4 cup icing sugar
directions
- Grease and line three 9-inch round baking tins.
- Sift together flour, baking powder, soda, salt and cinnamon.
- In a large bowl, blend together sugar, oil and eggs. Gradually add flour mixture to the sugar mixture, blending well. Tnen add the carrots, drained pineapple, nuts, and coconut; blend thoroughly.
- Turn into greased pans.
- Bake at 350F for 45 minutes and test for doneness. Cool a few minutes before removing from pans.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
