  • Grease and line three 9-inch round baking tins.
  • Sift together flour, baking powder, soda, salt and cinnamon.
  • In a large bowl, blend together sugar, oil and eggs. Gradually add flour mixture to the sugar mixture, blending well. Tnen add the carrots, drained pineapple, nuts, and coconut; blend thoroughly.
  • Turn into greased pans.
  • Bake at 350F for 45 minutes and test for doneness. Cool a few minutes before removing from pans.

Her sweets are fantastics, especially her pound cakes, Yummm <br> <br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
