  • Preheat oven 180 degrees Celsius, gas 4.
  • Oil a 9 x 13 baking tin.
  • Mix the sugar, oil and eggs lightly.
  • Stir in the carrots, (I use shredded instead of grated), raisins and zest of orange.
  • Stir in flour and bicarbonate of soda.
  • Add cinnamon and nutmeg.
  • Pour into tin.
  • Bake 40 to 45 minutes in middle of the oven.
  • When cooled, mix icing sugar and orange juice into a thick paste and coat cake.
