Carrot "Cake" Tea Sandwiches

  • 1 loaf cinnamon raisin bread
  • 8 ounces cream cheese frosting (1/2 can)
  • 8 ounces softened cream cheese
  • 1 cup grated carrot
  • 14 cup walnuts or 1/4 cup pecans

directions

  • Trim crusts off of bread.
  • Combine frosting, cream cheese, carrot and nuts.
  • Spread filling evenly on bread, top with another slice of trimmed bread to create sandwiches.
  • Slice sandwiches into quarters, and be creative with the shapes, long fingers, squares, triangles, or use cookie cutters to create other fun shapes.
  • Chill for at least an hour before serving.

  1. Can I make the spread for the Carrot Cake Tea Sandwiches the night before and chill it in the refrigerate before I spread it over the cinnamon raisin bread the next day?

  5. I made these for my mom's 80th birthday party, and all the ladies loved this. These tea sandwiches went before the food that was catered went. Definetely a hit. Thanks for sharing. I added crushed pineapple, but made sure it was drained very well.
