Carrot Cookies

"If you like carrot cake you will love these cookies. I have had this recipe for years, tearing it out from a 1986 Family Circle Christmas cookie issue. Note that I make a few substitions to this original recipe....1/2 cup canola oil instead of butter, and I use whole wheat flour for health's sake. They come out great. Everyone loves these cookies and I don't even mention that they are a "health food" recipe. Doubling the ingredients works fine and the cookies freeze very well. My husband raids the fridge and eats them frozen!"

  • Preheat oven to 350 degrees.
  • Grease cookie sheets.
  • Sift together flour, baking powder, baking soda, salt, cinnamon, ginger and nutmeg into small bowl.
  • Beat together butter, brown sugar and granulated sugar in a large mixer bowl until well mixed.
  • Beat in egg, vanilla and orange rind.
  • Stir in four mixture until well blended.
  • Gently stir in carrot, coconut, walnuts and raisins.
  • Dough will be very stiff, but don't worry.
  • Drop dough by teaspoonfuls onto the prepared cookie sheets, leaving about 2 inches between the cookies.
  • Sometimes I press the dough together with my fingers to make the cookie less crumbly when placing on the cookie sheets.
  • Bake cookies in preheated 350 degree oven for 12 to 15 minutes or until lightly colored.
  • Remove to wire racks to cool.

  2. I liked the fact the cookies contained raisins and carrots, but the spices were almost too overpowering with the quantity used; next time I think I would reduce the amount of spices. Also I didn't realize these cookies are "rock" shaped cookies, rather than flat cookies--that might have been a key fact to let people know how they are supposed to turn out looking (at least that helps me:). Thanks for posting the recipe Geema.
     
  3. Very, very good, moist, healthy cookies. I made them just like the recipe said, used butter, next time I will use more cinnamon. Love cinnamon. These are very good with a cup of coffee. Geema, Thank you so much for another tasty recipe.
     
  4. Okay, so my verdict. They are a very nice spice cookie. My favorite thing is that they are not overly sweet due to the balance of sugars. I cut the nutmeg in 1/2 though because sometimes a little goes a long way and I think that was a good decision. I put in about 1/3 cup unsweetened coconut and about 1/2 cup chopped pecans. I will make them again.
     
  5. Pretty good flavor, but I found the dough so crumbly and difficult to work with. Otherwise, not bad at all.

<p>Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges.&nbsp; As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic.&nbsp;<img title=Yell src=../tiny_mce/plugins/emotions/img/smiley-yell.gif border=0 alt=Yell /> I shouted and rebelled and cried.&nbsp; But the good news is that I can control my glucose levels simply by eating very low carb.&nbsp; What a complete turn around it was to&nbsp;pass up&nbsp;all my high carb vegetarian foods like grains, and veggies and embrace meat!&nbsp;<img title=Surprised src=../tiny_mce/plugins/emotions/img/smiley-surprised.gif border=0 alt=Surprised /> I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.</p> <p>&nbsp;The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain.
