  1. Beat shortening, add sugar, beat until light.
  2. Add egg, carrots and vanilla, beat.
  3. Add mixed dry ngredients.
  4. Drop by tablespoons on a cookie sheet ( I always use parchment on the sheet),.
  5. Bake a short 20 mins at 350 as they could dry out.
  6. Cool.
  7. Icing.
  8. Mix orange juice, zest and butter.
  9. Cream in icing sugar.
  10. Put in a fruit dish,
  11. Swirl the cookie upside down in the icing, set on a rack to dry.
  12. Store in a sealed container.
