Directions

  1. Coarsely grind to the following amounts of each cucumbers (3 1/2 cups), carrots (1 1/2 cups) and onions (1 cup).
  2. Combine them and add salt.
  3. Let stand 3 hours; drain.
  4. Combine sugar, vinegar celery seed and mustard seed.
  5. Bring to a boil.
  6. Add vegetables to the above.
  7. Simmer uncovered for 20 minutes.
  8. Seal at once in hot sterilized jars.
  9. Makes 2 1/2 pints.
  10. Chill before serving.
