Carrot "fettucini"

"This is a dish I came up with to keep from eating pasta, lol. Hope you enjoy it. I had it with a light shrimp in butter sauce."

  • 3 carrots, cleaned and the ends chopped off
  • 1 -2 tablespoon butter

directions

  • Using a vegetable peeler make ribbons of the carrots.
  • Add carrots to a pot of boiling water and cook until tender crisp.
  • Drain.
  • Stir in butter.
