Directions

  1. Blend flours, oatmeal, sugar, baking powder, baking soda and salt. Add raisins; mix so they are coated.
  2. Combine carrots and orange rind; add to flour mixture.
  3. Combine beaten eggs, oil and orange juice.
  4. Sir into dry ingredients until well mixed.
  5. Fill lined muffin cups 2/3 full.
  6. Bake at 400 for 20 minutes.
