Carrot & Pecan Cookies

  • Preheat oven to 350°F.
  • Beat butter and both sugars until creamy.
  • Add egg, OJ, and peel, and continue mixing until well blended.
  • Mix in flour, soda, and salt, and beat on low until thoroughly blended.
  • Stir in coconut, pecans, and carrot.
  • Drop by rounded spoonful 2 inches apart onto ungreased cookie sheets.
  • Bake 10-12 minutes, or until golden brown.
  • Allow to cool completely before frosting.
  • Top with additional pecans if desired.

  1. These are very wonderful cookies. The only extra ingredient which I do add to these is 1 1/2 tsps. of freshly powdered cinnamon while making the carrot-coconut mixture. We enjoy these alot. Great recipe!

I am a Colorado ski bum at heart, but am currently stuck in Miami, FL of all places working on my Doctoral degree in physical therapy at UM. I can't wait until I graduate and can get back to the mountains! 2 more years, 2 more years...I love to cook and find it a great way to relax and slow down after classes and I can't wait until I have more free time to be able to do it.
