- 1 cup softened butter
- 1⁄2 cup sugar
- 1⁄2 cup packed brown sugar
- 1 large egg
- 3 tablespoons orange juice
- 1 tablespoon orange zest
- 2 1⁄4 cups all-purpose flour
- 3⁄4 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1 cup flaked coconut
- 1 cup chopped pecans
- 1 cup finely shredded carrot

Orange Frosting beat together
- 2 cups powdered sugar
- 1 tablespoon orange zest
- 2 -3 tablespoons orange juice (as needed for desired consistancy)
directions
- Preheat oven to 350°F.
- Beat butter and both sugars until creamy.
- Add egg, OJ, and peel, and continue mixing until well blended.
- Mix in flour, soda, and salt, and beat on low until thoroughly blended.
- Stir in coconut, pecans, and carrot.
- Drop by rounded spoonful 2 inches apart onto ungreased cookie sheets.
- Bake 10-12 minutes, or until golden brown.
- Allow to cool completely before frosting.
- Top with additional pecans if desired.

I am a Colorado ski bum at heart, but am currently stuck in Miami, FL of all places working on my Doctoral degree in physical therapy at UM.
