  • Saute onions& garlic in margarine until tender.
  • Add chicken broth, carrots, potatoes, Italian seasoning and bay leaf.
  • Simmer, uncovered, until vegetables are tender, about 20-25 minutes .
  • Discard bay leaf and puree soup.
  • Season with salt& pepper.

  1. Easy soup. Good way to get more carrots into your diet. Filling and healthy. My suggestion to make this recipe easier: Boil diced carrots and potatoes in small amount of water until tender, mash (e.g. w/ potato masher), and then add the chicken broth to your desired soup consistency. Alternative to pureeing in a blender.
     
  2. Delicious! Followed recipe except doubled garlic and used potatoe masher instead of immersion blender to avoid releasing too much starch from potatoes leaving soup chunkier. A basic comfort food winner with ingredients always on hand.
     
  3. Very tasty and nutritious! I used more than double the garlic stated in the recipe, and I think I will use even more next time I make this soup.
     
  4. I added a cup of milk and some cheese.. it was amazing!!
     
  5. A nice, easy soup. I added a dollop of yogurt to it at serving. It is quick, tasty, healthy, so I'm happy. It would also be easy to change up the seasoning to get a different flavor profile. The immersion blender was perfect for this soup.

Tweaks

  1. Loved the idea about only puree 3/4 and leaving chunks in for the rest. I had a nice lean piece of ham in the freezer, so I chopped it in to bite size chunks and added it after adding back the puree. Cooked it for another 20 minutes. MMM MMM Good
     
  2. Added celery, subbed butter for margarine, added some celery seed, and used homemade beef stock. Also added some Mexican crema at the end. Very warm and filling on a cold winter day!
     
  3. Good as written, I will make some adjustments next time for my personal taste. More garlic and maybe red potatoes instead.
