Directions

  1. Spray an 8" baking dish.
  2. Preheat oven to 350°.
  3. Cook carrots in salted water until done and drain.
  4. Place butter, eggs, sugar, flour, baking powder and vanilla in a blender or food processor.
  5. Blend and add carrots a little at a time till pureed.
  6. Pour into prepared baking dish and bake for 45 minutes or until set.
  7. Let stand 5 minutes before serving.
