  1. This was a great and easy recipe! I only made 6 servings of it and it was great at dinner! I didn't have any coconut extract but I did have shredded coconut on hand and mixed that in instead! I will definitley make this again!
     
  2. This was a quick salad to mix up when you need something fast. It also has a good flavor and not a lot of mayonnaise on it. The addition of coconut extract was a new twist for me. Thanks for sharing your recipe.
     
  3. The coconut extract gives this recipe an interesting taste, but I would sprinkle it with a bit of coconut to let your guests know what there getting, just in case they don't like the taste of coconut. The raisins amount to one snack box full & the mayo 1/4 C.
     
  4. Very nice recipe. I was trying to make a variety of cold salads, and thought about carrot raisin salad. I'm glad I found yours! The chilling time is essential, and draining the crushed pineapple well is very important. I didn't have any coconut extract so had to go without and it turned out fine -- next time I'll try it with that addition. Thanks for sharing your mom's delicious recipe! Dianne

Hi, I live in Hot Springs, AR, but originally hail from the great windy city, Chicago. I have a house full of animals, all rescues, 8 parrots, 4 dogs and a cat. I am passionate about animals, especially ones that have been abused and neglected. If I had the money, I would buy a farm and fill it with animals that needed homes. I've been this way since I was a child and it seems I have passed my passion on to my daughter. How my poor husband puts up with us I don't know, buy he's a great guy and pitches right in with all the animals. He's a chef at a local resort (and an assistant zoo keeper when he gets home...lol).
