Carrot Rice Casserole

"A suprisingly flavorful dish that is quick and easy to prepare. Is well accompanyied by a salad. My mother found this recipe in the news paper, thought it sounded good and sent it to me. I was hesitant but ultimately amazed at how good it is!"

  • Melt butter.
  • Add grated carrots and onions; saute for 3-4 minutes.
  • Stir in cheese, cooked rice and eggs.
  • Pour the mixture into a greased 11x13 baking dish.
  • Bake @ 350 for 20 minutes.

  1. I've made this several times now. I find it as-written a little bland. I like to add garlic, cheddar cheese, salt & pepper and whatever spices/herbs catch my eye. You could throw most anything into this and it will work!

  3. Great rice! I am not a big fan of plain white rice (DH could eat it daily!) so this is a great dish for us. I loved the addition of the cheese and that it did not overpower. Made for Eating Well in November Tag.

  5. I liked this casserole. It's quite healthy with all of the carrots and I cut the butter in half and used low fat mozza. A nice recipe to use as a side dish - it has the starch and the veggies. There was enough for about 6 of us. Thanks!
