Carrot Souffle

"I modified this from a recipe I found in a Mart, Texas cookbook. I find that it has a very different flavor to most carrot recipes. My husband is not very fond of carrots but he eats this up every time!"

  • Grate carrots into a mixing bowl and add the rest of the ingredients. Beat until eggs are blended. Pour mixture into a buttered casserole and bake for 30 minutes at 350°. Spread bread crumbs evenly over the top and add pats of butter. Bake and additional 10 minutes.
