  • Wash, peel, coarsly chop carrots.
  • Coarsly chop onion.
  • Saute onion in oil.
  • When onion is translucent, add carrots, broth, and garlic.
  • Bring to a boil.
  • Turn heat to simmer, and cook until carrots are soft enough to puree.
  • Add peanut butter, then either transfer soup to blender or use stick blender to puree everything together.
  • Season with Siracha, salt and pepper, mint, basil, maple syrup, or other seasonings to taste.
