  • Slice carrots and sweet potatoes and cook 10 minutes in boiling salted water just to cover.
  • Add honey, sugar and oil. Cook gently until liguid is absorbed and carrots slightley glazed,about 30 minutes.
  • Sprinkle with lemon rind and ginger.
