Carrots Amaretto

  • Parboil sliced carrots (I usually use the baby carrots whole) until al dente, about 10 minutes.
  • Drain and rinse under cold water to stop cooking. This can be done a couple of hours ahead of time.
  • Heat butter over medium heat until melted. Add carrots, sugar and heat to caramelize sugar.
  • Add Amaretto and cook to reduce sauce to a glaze.
  • Season to taste with salt and pepper.
  • Serve immediately.

  1. This was so easy and the taste is simply delicious. I put honey in it instead of sugar and the next day they tasted even better. I also used 2 lb carrots since I had a 2lb bag. Definitely tasty enough for me!

  3. I love these!!! They are also good with a mixture of peach nectar/amaretto/brown sugar. Sometimes I make them in a small crocpot and let them "simmer" all day.
     
  4. Great carrots! I am a sucker for new carrot recipes and of course for anything involving Amaretto. I am glad I tried this. These carrots are incredibly easy to make and impressive. I had to add a small bit of cornstarch to the Amaretto-butter mixture as the carrots were cooking to thicken up the sauce a bit. These taste even better the next day!

I'm a grandmother who loves having the grandkids around. My son is currently living with me (on a short term basis) so I get to see and spend time with his kids more than I ever had, and that's a great thing. I love trying new recipes and since I have found RecipeZaar, the new dishes have been streaming. Sometimes I think the kids would prefer a little break, but until they speak up, it's something new for them about everytime they visit with us. I don't consider myself a 'cook,' I can only follow recipes. To me a cook is someone who can come up with their own recipes and have success at it (like my daughter).
