Cashew Chicken Casserole

"This is unique and fast because you do not have to cook the macaroni first! Prep time does not include overnight refrigeration. If you do not have time, just omit the overnight refigeration. I have done that in the past with no problems."

  • In a greased 13 x 9-inch baking pan, layer the first seven ingredients in the order listed.
  • In a bowl, combine the soups, milk and broth.
  • Pour over water chestnuts.
  • Cover and refrigerate overnight.
  • Toss butter and cracker crumbs; sprinkle over casserole.
  • Top with cashews.
  • Bake, uncovered, at 350 degrees F for 35 to 40 minutes or until macaroni is tender.

  1. What a change from the casseroles that I do make, yum! I did omit the water chestnuts, other than that followed recipe exactly. Thanks for a great recipe!
     
  2. Nice change from the usual casseroles. I really liked that you didn't have to cook macaroni before hand. Made and let sit for approx 1hr before baking. Came out great. It was a little salty for my taste, next time I will skip the boullion and just add water. Thank you for sharing!

I have a degree in Nutrition and Food Science and am very interested in trying new recipes. I ususally get cooking duties because I get home from work early enough to start dinner.
