  • .cut cauliflower into florets cook in boiling water for 10 minutes drain and mash stir in eggs cheese panko and cayenne add salt to taste coat grill pan with olive oil heat on medium heat form cauliflower into patties cook until golden brown about 3 minutes per side makes 8 patties.

  2. I just made this and loved them. It was just me eating them so I tweaked the recipe a little bit to make only 4. They didn't break apart. I also used a Mexican cheese mix, one egg, Panko crumbs, garlic powder, salt and pepper. I used cayenne but will cut back on the amount next time because it was a little spicer then I would want it. Overall came out great.
     
  3. These were easy to make, but just a bit difficult to work with. I made these as written. I got rid of all extra moisture from the cooked, drained cauliflower before mashing it. The patties were hard to keep together. I found that the smaller you make the patties, the better. They were a little bit bland as well. Perhaps with an extra egg, and some more herba and spices, these would work better for me. Thanx for posting!
     
  4. Epic fail. Stuck to the cast iron pan, had to throw it our, only a partial crust. Total waste of time and food.
     
  5. Made this with the riced cauliflower from Wegmans, so I wasn't sure if it was 1 head or more! I added 2 TBS flour, 1 C shredded mozzarella cheese, the shredded cheddar cheese, chopped green peppers and onions , one more egg, (it was not holding together), and then fried it in olive oil!! I could eat this every day!!! Next time I'm going to try it with shredded zucchini!

Tweaks

  1. Added garlic powder and Mexican cheese blend. Made half the recipe.
     
  2. In the recipe: Only use one egg. Instead of 1/2 cup panko crumbs, use 1/4 cup crumbs and 1/4 cup flour. Add 1/2 tsp onion powder, 1/2 tsp Old Bay powder. Next time I might reduce the cayenne pepper to 1/4 tsp as they came out a bit more peppery than we liked. In preparation: Instead of boiling the florets, I microwaved them. This reduced the amount of water they could absorb. It took about 10 minutes. After draining, I dumped them onto a dish towel, folded and pressed to remove any remaining water. I mashed and added the one egg, cheese, panko, flour and seasonings. Then I pressed the mix into a rectangular casserole covered and put in refrigerator overnight. I used a spatula and cut the mix into 8 rectangular sections. Once I got the first one out of the casserole, the rest came easy. I slid the patties into the hot oil and cooked as directed.
     
  3. This is the basic recipe I was looking for. I used regular flour instead of Panko because I didn't have any, and a hotter pepper powder and salt, but the rest was as written. I think the flour actually helped the patties stay together well, it was not a problem. The flavor was nice, if a little bland even with the hotter pepper. Next time I might try some ranch dressing powder. The whole family loved them as is though. Thanks for sharing!
     
  4. I followed the anonymous tweak and I steamed the cauliflower but then squished all the water out Of the mashed cauliflower in a linen dishtowel. After forming the patties, I baked them for 20 minutes at 375. Then, I broiled them for a few minutes on each side to brown. The extra things I added were Larwry’s Seasoned Salt in place of the cayenne pepper and an additional half cup of mozzarella cheese. I served with plain Greek yogurt sprinkled with dill. DELICIOUS!!!
     
  5. I have been making a version of these for many years. To help them stick together, I steam the cauliflower and then squish all the water out with a fine colander and a towel. After forming the patties, I bake them for 20 minutes at 375. They are basically done then and the cheese keeps them together. Then, I pop them into the frying pan to brown them on each side. The extra things I add sometimes add to mine are onions, chopped celery, chopped Colby cheese, garlic powder, Parmesan cheese, seasoning salt. Then, I put some Spicy Ranch sauce on my place for dipping. My husband is anti vegetables in general and he loves them.
