Cauliflower Mashed "potatoes"

ingredients
- 2 1⁄2 cups cauliflower, ground in a food processor
- 1⁄4 cup macadamia nuts, ground
- 1⁄4 cup olive oil
- 1 teaspoon sea salt
- 1 very small garlic clove
- black pepper, to taste
directions
- In a blender, combine all ingredients except pepper and process until the mixture looks fluffy, like traditional mashed potatoes. Top with pepper and serve.
- Note: I subsituted a few drops of Nama Shoyu for the salt, which gave it an excellent flavor.
