Ingredients Nutrition
- one head cauliflower (cut into florets)
- 1⁄2 pint heavy cream
- salt
- pepper
- 1⁄2 tablespoon fresh dill (optional)
- 1 cup sharp cheddar cheese, grated
- 1 cup monterey jack cheese, grated
- 4 -5 ounces goat cheese
- 1⁄4 cup parmesan cheese, grated
- fresh mozzarella cheese (optional)
- flat leaf parsley (chopped)
Directions
- Steam or boil cauliflower florets until tender.
- Mix cauliflower, heavy cream, salt, pepper and dill in mixing bowl.
- Pour into a greased 9 x 9 baking dish.
- On top of the cauliflower, layer the cheddar and monterey jack cheeses.
- Dot with pieces of goat cheese.
- Dust with Parmesan.
- Add fresh mozzarella.
- Bake covered at 350 degrees for one hour.
- Uncover and bake until cheese is brown and bubbly.
- Remove from oven and sprinkle with parsley.
