Cayenne-Candied Bacon

"This goes with the spicy breakfast bake. But it sounds good enough to serve with just about any breakfast dish. This was made by Emeril Lagasse on Good Morning America this morning. It looks sooo good, i can't wait to try it."

  • Preheat the oven to 350 F.
  • Line a broiler pan with aluminum foil, and position broiler rack on top of pan.
  • Lightly coat the rack with the vegetable oil.
  • Combine the brown sugar and cayenne in a shallow dish, and mix well.
  • Press one side of each slice of bacon firmly into the spiced sugar to coat.
  • Arrange the slices of bacon on top of the broiler rack in a single layer, sugared-side up.
  • If there is any sugar remaining in the dish, sprinkle it evenly on top of the bacon.
  • Bake until the bacon is crisp and the sugar is bubbly, 15 to 20 minutes.
  • Drain on paper towels and serve warm or at room temperature.
  • (Can be made several hours in advance.).

  1. Very good. The second time making this I more than doubled the cayenne, for a bit more head. Also sprinkled more of the brown sugar mixture on top. Cooked at a higher temperature and since I used a thick bacon cooked it longer.
     
  2. Quite delicious. Made a half recipe. Didn't oil the foil-lined broiler pan, and had no problems removing the cooked bacon. Effortless and tasty way to cook bacon! Thanks for posting.
     
  3. Had this for breakfast today along with scrambled eggs. OK, I could have eaten another pound of bacon! Draining on paper towels was a bit of a problem as the sticky bacon didn't want to leave without bits of the towel attached, so do this with really heavy-duty paper towels. The aluminum foil was great, just gather up into a ball and toss.
     
  4. Takes way longer than 20 minutes at 350.
     
  5. This was very good. I have also made something like this with chopped pecans sprinkled on top - yummy.
