Cayenne Candied Pecans

"This is a recipe that I borrowed from a great friend and chef, Chef James. This recipe is easy and the pecans come out delicious. They have a slight sweetness from the honey, a salty, nutty flavor from the butter and of course the spicy cayenne kick. These are fantastic in salads or just by the handful."

  • 4 cups pecans, toasted
  • 8 tablespoons butter (1/2 of a stick)
  • 13 - 12 cup honey (depending on your sweet-tooth)
  • 1 tablespoon water
  • 12 - 1 tablespoon cayenne (depending on your heat level)
  • 1 teaspoon salt
  • 1 teaspoon pepper

  • Pre heat oven to 350 degrees.
  • To toast the pecans, place evenly on a cookie sheet. Bake for 5-10 minutes at 350 degrees, checking often. They will burn quickly!
  • In a 4-quart saucepan, place all ingredients, except pecans, and heat until mixture reaches 250 degrees. Turn off heat and add pecans to saucepan and mix well.
  • Spread coated pecans evenly on cookie sheet lined with parchment paper or cooking spray. Bake at 350 degrees for 15 minutes. Check the pecans midway during cooking, give them a mix using a spatula, spread evenly on cookie sheet and continue cooking.
  • Cool and enjoy.

  1. They came out a sticky mess, so I wasted four cups of pecans on this recipe. The low end of the cayenne recommendation was too hot. About the butter, did you mean 8 Tbsp. (= 1 stick) or 1/2 stick? Please correct that. Small wonder there are no reviews.

I’m an inspiring home cook. I love cooking, the kitchen is the busiest place in our home. We have many traditions that focus on food and family, like our mandatory Sunday dinner. It’s the one day of the week that the whole family comes together and with kids getting on their own, it’s a special day for me because I get to have all the kids’ home. Of course for the kids it’s a hot, free meal and I always send them off with a care package of leftovers. I think I read cookbooks and magazines more than anything else. I watch anything food related on TV and in our circle of friends, most are chefs. We pretend to get together for football, UFC and what ever events we can think of but secretly it’s to try our new dishes on each other. Good food, friends and family what more could you ask for.
