Champagne Pork Chops in Chipotle Mustard Cream Sauce

- 4 boneless pork chops

For Marinade
- 1 cup champagne
- 1 tablespoon minced garlic
- 1 tablespoon steak seasoning
- 1 tablespoon olive oil

For Pan Sauce
- 1 cup champagne
- 2 tablespoons chipotle mustard
- 3⁄4 cup heavy cream
- 1 tablespoon fresh parsley, chopped
directions
- Put all marinade ingredients into a zip lock bag along with pork chops.
- Let marinate 24 hours.
- Heat a little olive oil in a large skillet over medium high heat.
- Add pork chops, turn down heat to medium.
- Cook pork chops on both sides until browned and cooked through, about 15 minutes.
- Remove pork chops from pan.
- De glaze pan with champagne.
- Whisk in mustard and cream.
- Stir in parsley.
- Return chops to pan to heat through.

Tryed this and really liked it. However, I made 2 small changes... substituted deli mustard for the chipotle and yogurt for the heavy cream. I like my sauces alittle thicker so added 1 tsp cornstarch (mixed with 1 Tbsp cold water) in the last 5 minutes of cooking. Chops were very tender, juicy & full of flavor.
