Ingredients Nutrition

  • 2 cups uncooked rice
  • 1 red pepper, chopped
  • 1 yellow pepper, chopped
  • 12 small red onion, chopped
  • 1 green apple, chopped
  • 23 cup cashew pieces
  • 23 cup slivered almonds
  • 23 cup craisins
  • chopped cilantro (to your taste)
  • 1 cup girard's champagne dressing

Directions

  1. Cook rice according to directions on your package.
  2. While rice is cooking, chop peppers, apple and cilantro.
  3. Chop nuts if you buy them whole.
  4. After rice is cooked add it to the other ingredients in a large bowl. You may want to add additional dressing to taste. Refrigerate until cooled. Toss often as dressing may settle to the bottom.
