Chapatis (Indian or Kenyan Wholewheat Flatbread)

"This is a recipe by Guy Fieri that I saw on Guy's Big Bite. Easy and tasty - a really good recipe. The cooking time is for only one batch of griddling because it depends on how big your griddle is. Each flatbread counts as 1 WW point. Enjoy!"

directions

  • In a medium bowl, combine flour and salt. Using a wooden spoon, slowly stir in water, until dough forms. Lightly flour a clean board and knead dough until smooth, about 10 minutes. Rest dough in bowl, covered with damp towel for 20 minutes.
  • Preheat a griddle over medium heat.
  • Divide dough into 8 equal balls. Using a floured rolling pin, roll balls out on floured board to 7 inches in diameter, about 1/4-inch thick. Place the rolled out dough onto griddle. Flip when raised bumps appear on the surface of the dough, about 1 to 2 minutes. Cook second side until it turns golden. Do not cook too long or flatbread will become brittle. Cover flatbread with a towel up to 20 minutes before serving.

  1. I am not sure how to rate this one, so I am skipping stars and just adding a review. I had a lot of trouble with the dough; the first time I mixed it up using equal parts white wheat and whole wheat flour the dough was so wet I couldn't work with it. I decided I must have measured in error and tried again using all whole wheat flour and...the same thing. This time I just added as much flour as it took to be able to even touch the dough, but even then kneading wasn't going to happen. Given that other reviewers haven't had this problem I still suspect user error! The end product (after much cursing in the attempt to shape the dough LOL) was yummy, though, and my kids especially enjoyed them. I brushed the tops with butter after they came off the griddle to replicate my favorite Indian restaurant and they were quite tasty served with chana masala. I will definitely try again in the future. Thanks for posting, Nif. Made for ZWT 8: The Wild Bunch.

  2. A really lovely dough that was super easy to make!! <br/>I put hummus in it and we also tried some different toppings like chicken salad. Not completely traditional but very good! Made for ZWT7 and Vegetarian Challenge.

  3. This was a super easy recipe to make. The amounts of water and flour were right on. The dough was easy to work with and rolled out nicely. I put them on an electric griddle at 350* and they were done in no time. They tasted great with just a little butter but would make a nice breakfast wrap too. Thanks for sharing. Made for ZWT7-Africa.

  4. I'm FINALLY getting this flatbread stuff down after trying several. This is the first all-wheat and can't believe how easy is it and yummy too, no wonder it's a favorite of the area. I followed the directions as printed spreading butter on them hot from the grill. Loved watching them "puff" in the pan and the tasted nice and light. Wonder what they'd be like if you added some spices like garlic or crushed peppers to the dough? Would make a great wrap too. Made for Africa part of ZWT 2011

I love great food and I particularly like trying cuisines new to me! Although I don't prepare as much food as I used to, creating in my kitchen is still one of my favourite things to do. Enjoy!
