- 125 g butter
- 1 cup white sugar
- 2 eggs
- 1 1⁄2 cups self raising flour
- 1 pinch salt
- 1 lemon juice, and rind
- 125 ml milk
directions
- Preheat oven to 180.
- Grease and line loaf tin with baking paper.
- Beat the butter and sugar until pale and creamy.
- Add the eggs separately, beating well after each egg.
- Stir in Flour, Salt and lemon rind.
- Gradually add warmed milk.
- Transfer the mixture to the prepared tin and bake for 45 - 50 minutes or until a skewer instead into the centre comes out clean (do not open the one door while the loaf is cooking).
- Remove the loaf from the tin, and while it is still warm, sprinkle liberally with caster sugar.
- Pour over the lemon juice then sprinkle liberally with more sugar.
- Stand for 15 to 20 minutes before serving.
