Charlotte's Lemon Loaf

  • Preheat oven to 180.
  • Grease and line loaf tin with baking paper.
  • Beat the butter and sugar until pale and creamy.
  • Add the eggs separately, beating well after each egg.
  • Stir in Flour, Salt and lemon rind.
  • Gradually add warmed milk.
  • Transfer the mixture to the prepared tin and bake for 45 - 50 minutes or until a skewer instead into the centre comes out clean (do not open the one door while the loaf is cooking).
  • Remove the loaf from the tin, and while it is still warm, sprinkle liberally with caster sugar.
  • Pour over the lemon juice then sprinkle liberally with more sugar.
  • Stand for 15 to 20 minutes before serving.
