Charred Beef and Roasted Veggie Orzo Pasta Salad

- 1⁄2 cup reduced-sodium chicken broth or 1/2 cup beef broth
- 1⁄4 cup liquid honey
- 2 tablespoons olive oil
- 1 tablespoon garlic pepper seasoning or 1 tablespoon fresh minced garlic
- 3 tablespoons Dijon mustard
- 2 tablespoons balsamic vinegar
- 1⁄2 teaspoon dried Italian herb seasoning
- salt and pepper
- 1 -2 sweet red pepper, cut into chunks
- 2 cups mushrooms, halved
- 1 vidalia onion
- 1 small eggplant
- 1 small zucchini (sliced half and diagonally)
- 1 (1 lb) beef top sirloin steak (1-inch/2.5 cm thick)
- 1 cup frozen corn kernels
- 1 1⁄2 cups dried orzo pasta
- 1⁄2 cup thinly sliced sun-dried tomato packed in oil (optional)
- 1⁄4 cup grated parmesan cheese
- 1 -2 tablespoon maggi seasoning sauce, and (to personal taste) or 1 -2 tablespoon soy sauce (to personal taste)
- 1⁄4 cup fresh basil (chopped)
directions
- Whisk together the first seven ingredients in a bowl. Season with generous pinch of each salt and pepper. On large rimmed parchment paper-lined baking sheet, toss the veggies (not corn) with half the broth mixture. Set remaining broth mixture aside.
- Season beef with remaining salt and pepper; place on top of vegetables. Place under broiler about 3 inches (8 cm) from heat; broil until lightly charred, about 7 minutes. Remove from oven; toss vegetables and turn beef over. Return to oven and broil for 7 minutes. Remove steak and let rest. Stir corn into vegetables; broil until vegetables are charred and softened, about 5 minutes.
- Meanwhile, cook orzo according to package directions; drain and toss with remaining broth mixture, sun-dried tomatoes and Parmesan cheese. Mix in charred mixed veggies. Add Maggi and/or soy sauce to taste. Thinly slice beef across the grain and arrange over veggies.
