  1. Cook the tapioca with the water for about 20 minutes while stirring.
  2. Add the coconut milk and cook for a further 5 minutes.
  3. Add the bananas, salt, sugar, and vanilla extract and cook for a further 5 minutes. Serve either warm or at room temperature with some chopped salted peanuts on top of each serving.
