Cheddar Gougeres

"From TOH: Gougeres—French cheesy cream puffs—are usually made with Gruyère cheese, but I like to substitute a very sharp cheddar for bolder flavor. Give your own twist to this recipe with the cheese of your choice."

  • In a large saucepan, bring the water, butter and 1/2 teaspoon salt to a boil. Add flour all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. Stir in cheese, chives and garlic.
  • Drop by tablespoonfuls 1 inch apart onto greased baking sheets. Sprinkle with remaining salt. Bake at 375?° for 14-16 minutes or until golden brown. Serve warm.

I'm a stay at home mom with a young daughter. I'm looking for small portion meals usually for our lunch. Since DH and I both love desserts and hate waste, I keep an eye out for smaller sized dessert recipes. Since my husband enjoys cooking, he typically handles the evening meal. We are trying to eat healthier, so less prepared mixes, and canned soups, and more things from scratch.
