  1. Prepare the mashed potatoes or bring leftover potatoes to room temperature. Season to taste.
  2. Beat egg yolks into mashed potatoes unti lwell mixed. Stir in the cheese, onion, green peppper and celery salt. Salt to taste.
  3. Whip egg whites itno soft peaks and fold into the potato mixture.
  4. Spoon into a well-buttered casserole, about 1 1/2 quart size. Sprinkle with paprika. Bake at 375 degrees for 25-30 minutes.
  5. Garnsih with a parsley sprig. Serve immediately.
