  • In med saucepan, heat beans, salsa, and chili powder.
  • Cook and stir until bubbly.
  • Spray griddle with cooking spray.
  • Brush 2 tortillas with WATER, brown that side.
  • Turn tortillas over.
  • Spread with 1/2 the bean mixture, sprinkle with 1/2 the cheese and 1/2 the cilantro.
  • Top with second tortilla, press down, and brush top with water.
  • Carefully turn over and brown other side.
  • With pizza cutter, cut each quesadilla into 6 wedges.

  1. Inez, this was so easy and satisfied my quesadilla craving. I added some extra chili powder but otherwise followed the recipe exactly. Yummy!! We dipped them in salsa and what can I say but OLE!! Thanks :)

  4. Very easy, and great for a meat-free weeknight meal for me & DH. I doubled the chili powder & added a dash of red pepper flakes. I used large spinach tortillas - 12-inch? -- and I had enough of the leftover bean mixture to make a third.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
