  • If using the vegetables, heat 2 tablespoons oil in a skillet over medium heat.
  • Add onions and peppers and saute until tender, about 5 minutes.
  • Remove from heat and set aside.
  • Preheat oven to 375°F.
  • Sift flours, baking powder and salt together into a large bowl.
  • In a separate bowl, beat eggs, milk, mustard and honey together.
  • Stir in onions, peppers and cheese.
  • Combine the two mixtures quickly and stir just until all the flour is moistened.
  • Spoon into 12 well-greased muffin cups.
  • Bake until muffins are golden brown, about 20 minutes.
