  • Clean and peel potatoes, cut them into slices of 2mm circa and wash away starch with cold water till water runs clear.
  • Dry potatoes with a clean towel or leave them out to dry for about 15 minutes.
  • After they are dry, deep fry them in the oil till lightly browned and sit them on paper towel to dry (do at least 4 batches or they won't cook evenly). When dry from the oil cover them in pepper, salt and cheese.
