Cheese and Thyme Stuffed Chicken

  • Preheat the oven to 400°F Heat the oil in a pan and fry the shallots for 5min until golden. Add the pine nuts and cook for 2-3min until golden. Take off the heat, stir in the breadcrumbs and thyme and season well.
  • Slice one chicken breast two thirds of the way through the middle and fill with a quarter of the breadcrumb mixture and a quarter of the cheese. Wrap 2 slices of prosciutto around and put on a baking sheet. Repeat with the other chicken breasts.
  • Roast in the oven for 30min until the chicken is golden and cooked through.
