Cheese Danish Pie Crust Squares

"My mom used to make cinnamon rolls with pie crust scraps, which gave me the idea for making these danishes. It is a great way to use leftover dough and enjoy the taste of a cheese danish without having to make a whole batch. These danishes are a wonderful treat to have with your coffee in the morning! I make them with my gluten free pie crust recipe (Recipe #266631), so I do not know how they would taste on a regular wheat flour crust, but I'm sure they would still be tasty! I like to make half the batch with chocolate chips and the other half with raspberry jam (put this on top of the cream cheese mixture before baking). I had trouble naming this one, so I would love to hear ideas for a tasty and descriptive name!"

  • Roll out your extra pie crust about 1/4 inch thick and cut into 6 squares. Take the scrap dough from that and shape into a 7th square (this one won't look as nice, but will be just as tasty!). Press down in the middle of your squares to make a small circular indention.
  • In a small bowl mix cream cheese and powdered sugar together with a fork until it has the consistancy of icing. Scoop a small amount in the center of each square (about 1/2-1 tsp). Bake for 20 minutes at 350 degrees (you can put it right in with your pie).
  • Let cool for a few minutes, then pop a chocolate chip in the center of the gooey cream cheese. Sprinkle powdered sugar on top for the final touch.

Made for the *Best of 2008* cookbook game + FTs *Prop It Up* photo challenge & tagged from fellow-gypsy M2Rs faves, I put a twist on your recipe by making the pie crust for the recipe vs using leftover pie crust. Using the crust from Recipe #164584 by Bergy (a pers fave) & otherwise made as written, I let my imagination run amuck thru what I had on-hand & made a variety that included mini-choc chips, strawberry preserves, coconut, caramel syrup, sugared cinnamon w/nutmeg & Red Hot cinnamon candies. The end result was a smorgasbord of taste treats & fun day in my kitchen. They are so easy to fix & would be ideal as a bite-size brunch finale, after-school treats for kids or when you just want to indulge yourself w/something yummy. Growing up, my mom didn't keep any junk food in the house so if I wanted something sweet I had to find a way to make it (or go to a friend's house)! I loved looking through my mom's recipe books and trying to find recipes that I could make. I baked a lot of home made bread from Betty Crocker's Big Red Book, and every holiday, my mom and I would make pies together from scratch. I didn't actually get interested in cooking main courses until I got married and realized that I had to actually put dinner on the table every night. Just as I was starting to get the hang of it, I was diagnosed with Celiac Disease in May of 2007. This meant that I had to learn a whole new way of cooking - gluten free. I have accepted this as a new challenge and have fallen even more in love with cooking and baking. There is nothing like the feeling I get when I have success with creating a new recipe! My inspiration usually comes from a craving for something that I can't have because it is not gluten free. I immediately go back to my kitchen and learn how to make it myself! I also focus on creating recipes with all natural ingredients and avoiding artificial or added sugars.
